Sabzi Pullao Recipe

Sabzi Pullao Dish

Ingredients:

  • 500 gms rice, boiled with salt to taste (spread over a thali so that each grain separates)
  • 2 cups mixed vegetables, boiled (carrots, french beans, peas and potatoes)
  • 2 onions, sliced fine and fried crisp
  • 1½ tsp adrak-lasan paste
  • A handful of cashewnuts and raisins, fried
  • 2 pinches saffron, dissolved in ½ cup milk
  • 2 pinches yellow food colouring dissolved in 2 tbsp milk
  • 2 pieces dalchini
  • 4 lavang
  • 2 elaichi
  • 1 tej patta
  • ¾ cup beaten curd
  • 3 tbsp ghee
  • 3 green chillies, slit
  • Salt to taste

Method:

Heat 1½ tablespoons ghee and add the sabut masala, allowing it to splutter. Add the adrak-lasan paste and fry a little. Now add the boiled vegetables and fry further.

Put in the beaten curd, 3 slit green chillies, crushed fried onion and salt to taste, then set aside.

Line a heavy bottomed dekchi with ghee. Spread ½ of the rice, cover with the vegetable-curd mixture and spread the remaining rice over this.

Sprinkle the saffron milk, yellow coloured milk, fried nuts and dot with remaining ghee before covering tightly. Put over low heat for dum.

Mix before serving.
