Malai Kabab Recipe
From Kebab Section of Hyderabad
 Malai Kebab Dish
- 500gms breast of the chicken, cut into 1 ½ “ cubes
- 6 – 8 green chillies
- A handful of kothmir and pudina, chopped
- 12 flakes lasan
- 8 – 10 almonds or cashewnuts
- ¾ cup beaten cream
- 1” piece ginger
- Juice of 1 lemon
- Oil for basting
- Salt to taste
To the washed and dried chicken cubes, apply the lemon juice. Grind the following to a fine paste: green chillies, almonds, adrak-lasan, pudina and kothmir. Apply this paste to the chicken. Next add the cream and mix well before adding salt to taste. Allow the mixture to then marinate well for 6 hours. Thread on skewers and grill over charcoal, basting with oil or ghee. Serve hot with dahi chutney.
