Malai Kabab Recipe

Malai Kebab Dish

Ingredients:

  • 500gms breast of the chicken, cut into 1 ½ “ cubes
  • 6 – 8 green chillies
  • A handful of kothmir and pudina, chopped
  • 12 flakes lasan
  • 8 – 10 almonds or cashewnuts
  • ¾ cup beaten cream
  • 1” piece ginger
  • Juice of 1 lemon
  • Oil for basting
  • Salt to taste

Method:

To the washed and dried chicken cubes, apply the lemon juice. Grind the following to a fine paste: green chillies, almonds, adrak-lasan, pudina and kothmir.

Apply this paste to the chicken. Next add the cream and mix well before adding salt to taste. Allow the mixture to then marinate well for 6 hours.

Thread on skewers and grill over charcoal, basting with oil or ghee.

Serve hot with dahi chutney.
