Jingha Pullao Dish

Jingha Pullao Recipe
- 450 gms Basmati rice, washed & soaked for ½ hour
- 250 gms prawns, shelled
- 4 green chillies
- 2 tsp khus khus
- 2 tsp adrak-lasan paste
- 2 small pieces dalchini
- 4 lavang
- 1 tej patta
- 3 green elaichi
- 8 kalimiri
- 1 onion, sliced
- A handful of kothmir, chopped
- A handful of pudina, chopped
- 1 tsp garam masala
- ½ tbsp oil
- Salt to taste
Grind the following to a fine paste: onion, pudina, khus khus, green chillies and haldi.
Apply the adrak-lasan paste and masala paste to the jinghas and fry till the oil separates.
Now add the rice and fry a little. Put in warm water, salt and garam masala. Cook till rice is tender and keep over dum.
Serve hot, sprinkled with chopped kothmir.
