Firni

Firni

Ingredients:

  • 2 tbsp rice, washed, drained and made into a paste
  • 1 litre milk
  • ½ cup sugar or to taste
  • ½ tsp kewra essence
  • ½ tsp rose essence
  • 1 tbsp chironji
  • 1 tbsp pista, chopped (blanched)
  • ½ tbsp almonds chopped (blanced)

For Decoration:

  • Rose petals and warkh

Method:

Dissolve the rice paste in 1-cup milk. Heat the remaining milk and as soon as it boils, add the sugar, allowing it to dissolve completely. As soon as the sugar has dissolved and the milk starts boiling, add the rice paste, stirring all the while, till the milk is nice and creamy, then remove. Add the essence and stir well.

Pour the Firni into an earthen bowl and cover with warkh. Sprinkle with nuts and rose petals.

Serve cold.
